YAKUZEN Cooking Class in Copenhagen : The Spring Equinox

A Hands-On Cooking Class (in English)

🌿 The Spring Equinox Yakuzen — Balancing Light, Energy & Seasonal Vitality

Finally, the long, quiet winter is drawing to a close.

March 20th marks the Spring Equinox. As the sun rises due East and day and night stand in perfect balance, this moment has long been recognized as a natural turning point — a transition from the inward, restorative quality of Yin toward the outward, dynamic movement of Yang.

In our northern climate, our bodies have adapted to months of cold and limited light. Now, just as nature begins to stir, we too experience a subtle but powerful seasonal shift.

In Asian Traditional medicine, spring is associated with the Liver system (肝_Kan). The Liver supports the smooth flow of Qi (気_energy), circulation, and emotional balance. It plays an essential role in coordinating movement — both physical and internal.

As the energy conserved during winter begins to rise more actively, this system can feel temporarily strained. It is during this seasonal transition that some people notice:
⚫︎increased irritability or restlessness
⚫︎tension in the shoulders or head
⚫︎sensitivity to wind, pollen, or dry air
⚫︎fluctuations in energy levels
These are not signs of weakness, but natural responses to a changing environment.

In this workshop, we will explore how seasonal Yakuzen cooking can gently support this transition. Using ingredients available in local markets, we will prepare dishes that:
⚫︎encourage smooth circulation and lightness
⚫︎include naturally bitter spring elements to support balance
⚫︎nourish and replenish after winter
⚫︎incorporate aromatic ingredients to ease tension and promote flow

In this YAKUZEN cooking class, we bring together Japanese seasonal wisdom and tradition, interwoven with the principles of Traditional Chinese Medicine (TCM), using ingredients available in Denmark.

You will learn how to create a complete seasonal Yakuzen meal that supports the body’s natural shift into spring — encouraging lightness, smooth circulation, and renewed energy as the season turns toward expansion and light.

Together, we will prepare dishes designed to promote flow, sustain steady vitality, and help you feel balanced and aligned during this seasonal turning point.

Let us welcome the return of the light with balance, clarity, and quiet vitality.

Together, we will prepare Yakuzen dishes designed to awaken body and mind, renew vitality, and help you welcome spring feeling lighter, clearer, and deeply aligned with the season ahead.
